Steel ground for daily prep

We start with stainless steel stock and grind thin, uniform bevels that move easily through hard vegetables. Several of our sets use German steel, and we add an etched finish to certain blades purely for a traditional wave look on the counter.

Hardwood on the work surface

A counter block keeps sharp edges off the back of a cutlery drawer where steel knocks against steel. We angle the slots so you can draw the bread blade or chef knife with one hand while holding food on the board with the other.

Eight knives at dinner

A steak knife belongs at the place setting, not hidden in a drawer. We grind our steak edges with small serrations that slice through seared crusts easily, giving everyone at the table the same clean cut.

Use and care

Keep the edge you paid for

At the sink

18 of our 19 listings are marked dishwasher safe. We still wash ours by hand: rack rattle and hot detergent are harder on an edge than a whole month of cutting.

Warm water, a soft sponge, and dry the blade right away. Water spots are cosmetic; standing water is not.

On the board and in the block

Cut on wood or plastic. Glass, stone and ceramic plates win every argument with an edge.

Store knives in the block or a drawer insert, not loose in a drawer. A few strokes on the honing rod before big prep keeps the edge standing.

The built-in sharpener in the wood block keeps the small paring blade keen enough to peel apples without tearing the skin.
