Storage
Where knives live decides how long they stay sharp. The block usually wins.
A knife dulls two ways: cutting, and touching things that are not food. A drawer full of loose knives is the second way on a timer. Every open and shut knocks edge against edge, and a month of that undoes a sharpening.
That is the whole case for the block: one slot per blade, nothing touches, and the knife you want is visible before your hand moves. 16 of the 19 sets on our rack ship with one, and 16 of those build a sharpener into the back so upkeep lives where the knives do.
Counters are contested ground. A small kitchen may not have the footprint, and a rental may not want the visual. The drawer works fine on one condition: an insert with a channel per knife. A bamboo in-drawer tray costs little and does the same job a block does, lying down.
The magnetic strip is the third road. It keeps edges away from all contact and takes zero counter space, but it asks for careful hands; pull sideways, not down, or the edge drags the steel of the bar.
